Meat Empanadas (Main Dish)
Ingredients
1/2 kilogram pork
1/2 kilogram beef
4 hard-boiled eggs
1 whole spring onion, chopped
1 bell pepper, diced
2 cloves of garlic, minced
Parsley
Salt and pepper
Directions
1. Cover meat with water. Cook meat until tender, save the stock. Fry vegetables in a little oil. Add 1 cup of meat stock. Boil for 2 minutes. Add the finely chopped meat. Boil until well mixed, for 5 minutes. Add the chopped, cooked eggs.
2. Dough for Empanadas: 1 kilogram of flour, 1 cup of pork fat, warm water and salt. Mix and knead until dough is smooth
3. Roll out the dough until thin. Cut with a round cutter (a tuna can is a good size) Add the amount of meat mixture you desire. Moisten the ends with water and fold in half. Deep fry until brown. (“Eating & Recipes)
